Florence fennel Fedro
Foenicum vulgare var. azoricum L.
Fennel that is resistant to cold and is suitable for spring and autumn production. We don't sow/plant it for summer production because the heat makes it blossom. It takes approx. 3 months from sowing to harvesting.
It makes large tubers which can be used in soups, sauces, salads, cooked or fried. The leaves can be used in salads and teas and the seed can also be used for teas. It has a sweet taste and is therefore often used as food for babies. It also has a very specific taste, which is why many people don't like it on its own so they combine it with other vegetables and herbs.
